Chili con queso is a great topping for grilled chicken, or it can be used as a dip for an appetizer. Either way, when you make it at home with good ingredients, it is something very special.

Grilled chicken smothered in chili con queso

 

Ingredients:

2 tablespoons of butter (made from milk free of antibiotics and growth hormones)
1 large white onion
4 medium tomatoes
6 roasted green chili peppers (or the equivalent from a jar)
1 to 2 cups of cheddar cheese (made from milk free of antibiotics and growth hormones)
 

Directions

Butter in frypan Turn on a large fry pan to medium heat. Put the butter and onions into the pan and allow the onions to cook until light brown
Adding chopped onions
Fry onions until brown

Cut tomatoes Next cut the tomatoes into quarters or eights, add them to the onions and allow them to cook down. This will take several minutes.

Allow tomatoes to cook down

Cut green chilies Cut the roasted green chilies into small pieces, add to the frypan and stir the entire mixture. Allow the flavors to blend for 5-10 minutes.
Stir in green chilies and let cook

Adding cheese Grate at least a cup of cheese and completely cover the mixture with cheese. Slightly stir the cheese into the mixture, then cover the frypan and allow the cheese to completely melt. This can take another 5-10 minutes. Once melted, then either put into a bowl for dipping, or cut a grilled chicken breast in half, kind of butterfly style and cover with chili con queso.

Allow cheese to completely melt

If you are able to get the type of ingredients outlined in the ingredients list, mainly antibiotic and growth hormone free butter and cheese, then this is a healthy meal full of good for you fats and protein. The other key is finding good green chilies.
