* We turned this into a pizza party by making individual sized pizza's so everyone could make a pizza their way

Conclusion: Another excellent lower carb meal

Yummy pizza

Personal pan pizza, perfect! This pizza does take a bit of effort, but it has no grains, and it browns up nicely.  

Fresh Pizza Sauce
ingredient Start your pizza sauce with fresh tomatoes, onion, and garlic
chopping onion I love gadgets in the kitchen and none more than my chopper. It makes perfect sized pieces, avoids irritating my eyes with onions, and is easy to clean. Just rinse and put into the dish washer.
 tomatoes Note the size I chopped the tomatoes, this way there are no large pieces left after it reduces to a sauce. Since the garlic cloves were small, I just put them in whole, you could also mince the garlic first 
add to pot I use a medium to large heavy pan. Put the tomatoes, onion, and garlic into the pan
 add salt and water Add ~1 cup of water and a generous teaspoon of salt
cook until a sauce Allow the mixture to boil, then turn to a simmer and let it reduce into a nice sauce
add herbs Add fresh herbs to flavor your sauce. In this sauce I used fresh tarragon and thyme


Making the pizza dough
cauliflower heads Select some nice cauliflower heads, for this recipe I used three heads so there would be lots of leftovers
blend until it is like a rice Put the cauliflower into a food processor. Allow it to grind the cauliflower until it is has the consistency of rice, then pour it into a large mixing bowl. This next step is pretty key although I don't have a picture of it. You need to get most of the water out of the ground cauliflower. You can do this by straining it, if you have a fine enough strainer, or you can put small amounts into a hand towel and squeeze the water out, either way this is a key step
mix with egg Add two eggs (~1 egg for each head of cauliflower) and some finely chopped onion to the cauliflower and mix it together thoroughly
form into pizzas Form the mixture into individual sized pizza's. You can also make larger ones. I decided on individual pizza's so everyone could put the toppings on they wanted. I spread the mixture until it was approximately a quarter inch thick
cook until brown Put the pizza's into the oven and cook for 45 minutes or until they start to turn golden brown on the edge. Note this pan I made a couple of larger pizza's

Prepare your toppings and your Pizza
roast peppers Fresh roasted peppers are a great topping for a pizza. Turn your grill onto medium high and place the peppers onto the hot grill. Cook the peppers until they are burnt all the way around on the outside. Remove the peppers from the grill and wrap them in wet towel for 5 minutes. Take one pepper at a time and remove the skin so all that is left is the flesh. Remove the seeds, and chop the flesh into bit sized morsels. These are so good on pizza, but in many other dishes too 
toppings For our pizza party, besides the freshly made sauce and roasted peppers, I put out some nitrate free pepperoni and genoa salami. I fried some garlic in a pan, removed the garlic, then fried some mushrooms, removed the mushroom and fried some fresh spinach. I harvested some fresh basil from the garden and cut it into small pieces, and of course put out some fresh mozzarella cheese
make each your own The next step is for everyone to make their own personal pizza
ready to cook I used parchment paper to keep the pizza's from sticking to the pan
remove from oven It took around 10 minutes at 425F for the pizza's to be ready


Another great lower carb meal that is fun to do, and the leftover pizza shells can be used for a few days.
