Bowl of Ice Cream

Who doesn't like a bowl of ice cream, the problem is all of the commercially available ice creams are not exactly healthy. I won't list all of the "bad" ingredients like trans fat, sugar, bad fats, HFCS, ok, I'll stop, you get the picture. So for those of us trying to keep our diet as clean as possible, there is a way to make ice cream that is made simply with ice and cream. Plus a little sweetener, vanilla and whatever flavor you want. It also requires having a high speed blender, a Vitamix works great. 


Ingredients (for ~4 servings):

1 cup Organic Whip Cream
2 cups Ice
1 tsp Organic Vanilla
Stevia to taste
Flavor such as a fruit, or chocolate, or whatever will mix nicely

This is so simple, it's almost criminal, and with today's blenders, it means you can make ice cream at the last second which is important as this type of ice cream does not freeze well.

The key ingredient to making this ice cream as healthy as possible is the quality of whip cream. We use Strauss brand whipping cream. It is organic and from grass fed cows, plus the only ingredient is organic cream. Most whip creams contain a product called carrageenan, this is used to give the cream (or yogurt or most other dairy products) a thicker texture. According to Joanne K. Tobacman, M.D. from the University of Illinois College of Medicine, her clinical studies have proven it causes inflammation and inflammation is the root cause of many diseases including heart disease and dementia.

Start by adding 2 cups of ice to the blender, then add 1 cup of cream, 1 tsp of vanilla, a pinch of stevia (or other sweetener to taste), then add your flavor. In this example, we juiced a lemon for the flavor. If the lemon is organic, you can also add some of the zest from the lemon rind.

 What a yummy desert or treat, and if you are following our baseline diet where you've reduced your non-vegetable carbohydrates and replaced them with body friendly fats, then this is even more than a treat.
