Bacon and Eggs

I was looking to come up with a variation on bacon and egg's that didn't include the bread. By cooking down spinach, it makes a great base layer to put the egg's on.

This recipe is how to make pan fried egg's, that are cooked to medium while being sunny side up. Add in some fresh garden tomatoes, feta cheese and nitrate free bacon, and you have a hearty meal to keep you going for hours.


Ingredients:

2 cups of organic spinach
3-4 eggs (organic or farm fresh)
2 medium tomatoes, chopped (organic or farm fresh)
Feta cheese, to taste
Bacon (nitrate free)
Butter (from grass fed beef)

bacon cooking First cook the bacon to your liking, we have ours close to crispy.

Now it is decision time, if you know the source of the bacon and are comfortable using the bacon drippings, you can cook the spinach down in that, or start with a fresh pan and cook the spinach in butter. We usually use butter, because we prefer the flavor of the butter. Cook the spinach on medium - low heat.

While the spinach is cooking, cut the tomatoes into pieces, then break apart, or cut the feta into small pieces.

spinach cooked down Once the spinach has cooked down, crack open an egg, and allow it to sit on top of the spinach, repeat this with 2-3 more eggs, and spread them out evenly over the top of the spinach.



Next spread out the cut tomatoes evenly over the spinach.



Sprinkle the feta on top.



Now cover with a lid, turn the heat down to low and cook for about 7-10 minutes or until the egg whites and yolks are at the consistency you like.

cooked in pan Perfection for us is when the cooked eggs still have a slightly runny yolk.

This is a low carb, stout breakfast that will keep you going for hours. Plus it falls in our category of a quick healthy meal.

One very important note, since there is no bread to clean your plate with, we give you our approval to lick your plate, of course you may need to be alone for this to happen, but it's worth it!
