Baby crustless quiche

These great tasting little snacks keep well in the fridge for up to a week. The flavors seem to enhance as the days go by. They make for great snack, or a quick on-the-go breakfast when needed.




Ingredients:

10-12 Eggs
4 cups coarsely chopped spinach
1 bunch of green onions, chopped
1 1/2 cups shredded cheese (mozzarella or sharp cheddar)
12 cup Marsha's Power Punch [buy online here]
1/2 cup green chillies (optional)
1/2 cup either plain yogurt, plain kefir, or heavy cream
1/2 parsley, chopped
salt & pepper to taste

 

1. In a large stainless or glass bowl, put in the spinach, parsley, egg's and onions
2. On top add Marsha's Power Punch, cheese then the optional chillies
3. For you gadget types, a salad shooter works great at shredding hard cheeses like cheddar

4. Use a large fork or spoon and start blending all of the ingredients
5. Continue mixing until all ingredients are well blended
6. Add kefir, cream or yogurt, then stir in
mix mix 2 add kefir or cream
7. Fill each hole in the muffin tin until completely full with mixture
8. Bake for 20-30 minutes at 325F, start checking at 20 minutes
9. Wait a few minutes, then enjoy!
