Recipe: Low Carb Crunchy Chocolate Chip Cookie

Choco chip cookie

These low carb chocolate chip cookies are high in fiber, essential fatty acids, are amazingly yummy and best of all crunchy.











Ingredients:

2 cups raw cashews
2 cups almond flour
1/2 cup Marsha's Power Punch
1 dash KAL brand stevia
2 eggs
1 tsp cinnamon 
1 1/2 tsp ginger powder
1 tsp vanilla
1 1/2 tsp baking powder
1/4 cup coconut oil
1/4 cup melted butter
1/2 cup chocolate chips
1/2 cup walnuts (optional)

4 drops Orange essential oil (I used doTerra Citrus Bliss)

 

1. Mix cashews in a food processor on low for 2-5 minutes until crumbly
2. Add almond flour and dry ingredients, mix on low for 1 minute
3. While blending, drizzle in coconut oil and melted butter. Continue to mix until well blended
4. Add eggs, vanilla, and orange oil. Blend well
5. Add chocolate chips, walnuts, and Power Punch. Pulse or stir in until evenly distributed but not minced.
6. Drop by teaspoonfuls onto a parchment paper covered cookie sheet
7. Bake for ~15 minutes at 325F
